Accepting New Clients
Ingredients:
¼ cup unsweetened coconut flake (without preservatives)
2 cups slivered or chopped almonds
1 cup raw pecans
1 cup raw walnuts
1/4 cup chopped raw cashews
½ cup raw pumpkin seeds
1.5 Tablespoons chia seeds
1 Tablespoon ground flaxseeds (store in the freezer)
1.5 teaspoons ground cinnamon
2 Tablespoons coconut sugar
¼ teaspoon salt
3 Tablespoons butter, ghee, coconut oil or olive oil
1-2 Tablespoons maple syrup
1 Teaspoon vanilla extract
¼ cup roasted, salted sunflower seeds
Instructions:
Preheat the oven to 300 F degrees and position the rack in the center of the oven.
Put parchment paper on a large rimmed baking sheet
In a large mixing bowl, combine the coconut, nuts, seeds, chia seeds, flaxseeds, cinnamon, coconut sugar and salt.
Melt coconut oil or butter in the microwave or stove top. (skip this step if using olive oil).
Add vanilla to the melted fat.
Poor coconut oil, butter or olive oil/vanilla onto the nut mixture and stir.
Spread the nut mixture evenly over the parchment.
Bake for 20-30 minutes, stirring half way through. You don’t want to overly brown your nuts!
Take out of the oven and stir in the sunflower seeds.
Let cool and then store in a Qt. glass mason jars.
